This ki...Thanks for sharing this experience, Terry.<br />This kind of improvement is more likely to happen when the tea has been well dried or roasted. However, it's less and less the case, especially with those that follow the trend of freshness. They are not dried sufficiently and they will turn sour with age. I'm glad that you could experience a more traditional Baozhong. It's really striking on medium roasted Baozhongs (see my Qizhong Oolong) how it's getting better with time. Another thing is that very young and fresh Baozhongs can have too much energy from their recent production. Teas tend to get sweeter and smoother as they age. I learned this quite by accident with baozhong. Our store (The Steeping Room) bought some baozhong. We are not sure what happened by the baozhong we received was not very good. So I took the 5 pound bag home to use it as iced tea for when I was working in my yard and garden. I was surprised to find after 3 years that it really was tasting good. I took it to a tea tasting group that I had been leading for the last 6 years. We compared the 3 year old tea to a new baozhong that we had in our store. The new baozhong was quite good. But 10 of the 11 people in the group thought the old baozhong that we took off the shelves 3 years before because it was not very good tasted better than the newer baozhong.
