Tea process around 1885

These are very nice pictures of how tea was processed in the 19th Century. Figure 4 is particularly interesting as it shows the hong pei, charcoal drying, process. Compare it with this picture and you'll see that some shops in Taiwan are still roasting their tea using this traditional method. Why? Because the charcoal will add nice, sweet, wooden taste that electric ovens just can't imitate.
