My tea class 'The Seasons of Dong Ding Oolong" has finished stage 1, the methodical brewing and study of each season. We have studied the spring season here:

We also studied the fall season, since it we compared each season with autumn, a lesser known season.
This Sunday, as an extra, we will study this roasted Oolong from the Dong Ding competition. This tea comes from Shan Lin Xi, not Dong Ding, and I will explain why.
Next week, we will continue with this Dong Ding class, but this time, I will brew, one tea at a time, each Dong Ding Oolong according to the character we have discovered. It's going to look much more like the first video above, which is a 2009 spring Dong Ding competition Oolong!
Note: The spring 2025 San Hsia BiLuoChun is available! It's the first green tea batch of the year. In terms of Taiwan green tea, it doesn't get better or fresher!
