After 4 lessons about fresh high mountain Oolong, we are now examining the more complex roasted Oolongs. Last week we were brewing a 2022 spring high mountain Oolong from Shan Lin Xi. This week, we have turned our attention to very similar leaves: spring 2021 qingxin Oolong from Shan Lin Xi. The difference is that these leaves were processed 'Dong Ding competition style'! In the coming weeks, we will continue our exploration of roasted Oolongs from this sampler. They are a perfect fit for the cool seasons and their long aftertaste helps to prolong our tea pleasure longer and longer!
